We dehydrate fresh, Québec-grown moroccan style mint, and steep it for 24 hours in our custard base. We don't add any essences or anything, we just give the leaves a good long soak. What we're left with is a subtle mint flavour that elevates the dark chocolate stracciatella. Yep, we know it's not green- it shouldn't be.
