Québec Corn

In the dog days of summer, when the corn is at it's sweetest we load up on bags, and bags, and bags of sweet corn from St-Remi.  We peel corn all day, then remove the kernels and dehydrate them so we can use them throughout the year.  This ice cream tastes truly like Québec in the summer.
