Québec Strawberry

Each summer, when the timing is right, we buy strawberries by the case from our favourite farmers at the Jean-Talon Market, then it's all hands on deck to preserve a year's worth of compote.  Every year it tastes a little different, but we like it that way, because to us this ice cream tastes like summer.
